Hi...they just found a 2.7cm septated cyst on my thyroid. Dr. wants me to get a biopsy and at the same time said that because of its size, it would need to be removed. Why don't they just schedule the surgery and remove it and then biopsy instead of making me do the biopsy first? Just trying to understand it all.

You have septate cyst in thyroid. It can be due to benign lesion like colloid goitre or other cystic lesion. But there is chance of papillary carcinoma of thyroid is also there.
Biopsy give you exact diagnosis. Then you should go for surgery.
Because on the biopsy result we can decide whether you need cyst removal only(cystectomy) or half thyroid removal (hemithyroidectomy) or other surgery. So its wise to go for biopsy and then go for surgery.
