My daughter was complaining of a sore throat, and I looked inside her mouth and she has what looks like a swollen sac on the back/side of her mouth, the uvula is also tilted to the opposite side. She had a high fever last week from her crohn's disease, could the fever of caused the mouth issue??

Looking at the symptoms,your daughter seems to be suffering from Quinsy(peritonsillar answer).It is pus collection surrounding one of the tonsil causing unilateral throat swelling and uvula shifting to opposite side and fever.It is not related to Crohns disease.It is caused by bacterial infection in tonsil.
It is advisable to consult an Otolaryngologist doctor as soon as possible.Pus drainage from surrounding of tonsil and injectable Antibiotics needs to be given along with Analgesic with Antiinflammatory like Ibuprofen and Antipyretic like Paracetamol.
She needs to drink lots of fluids to prevent dehydration.Also do warm saline gargles.
