WHat I can make out from your description is that your uncle may be suffering from chronic pancreatitis with calcifications and dilated pancreatic duct. Chronic pancreatitis can be treated by medications like pancreatic enzymes like creon and surgeries like Puestow s operation, Whipple s operation , distal pancreatectomy depending on the percentage of pancreas involved.
