I have been monitoring my bp for the last 7 days. Went to doc today. bp range 145-168 / 80-92 while at doc. At home was all over the place, but average 130-145 / 68-82. Prescribed Losartan Potassium 50 mg. Took one pill at 12:30pm. My bp for the last 2 hours has been 114/62 , 116/75 and 120/80. Is this just coincidental, or does the med work that fast?

This can happen many times that the BP is raised whenever being in medical setting and there is a term for this called "white coat hypertension." In this when you come back the readings will be reduced.
After taking Losartan, it might have started working while its peak effect comes in 4 to 6 hours. If you would have mentioned that you are already a known case of hypertension or not and did you use to take tablets for long, it would have helped me more to guide you. l will advise you to continue medicines if you were already a known case of hypertension and this happened for the first time. If you were not a known case of blood pressure and are concerned about your readings appearing different every time, you can repeat your blood pressure in 3 to 4 different occasions again and if persistently high you can continue the medicines thereafter.
