It seems like she having Gastroenteritis . It is infection of stomach and Intestine. Most of these gastroenteritis are due to Viral infection and will subside in 2-3 days but you need to make sure that you take plenty of fluids so that dehydration doesn't occur.
If the pain is severe you need to consult a doctor as he needs a prescription for Anti spasmodic medications.
If your symptoms persists then she better get tested as the chance of bacterial infection becomes high in that case and you may also require Antibiotic s for that.

What exactly you mean by backed up stool ?
Exploratory laparotomy can be done but see it will detect only any structural problem in the intestine not functional problems like Malabsorption syndromes.
My advise is to first test for these Malabsorption syndrome by doing a Colonoscopy , Stool for Calprotectin , Stool for alpha 1 antitrypsin , Biopsy of Intestine and analysis.
If all these come negative then going for a Exploratory laparotomy is reasonable.
