Your mothers problem is most likely gluten sensitivity. There are mainly two types in this. The one with Celiac disease and others who are negative for Celiac and only gluten sensitivity.
In case of Celiac disease you should avoid gluten containing food completely as it is autoimmune disease and cause further damage to the intestinal wall. You can do blood test for Celiac disease and rule out that. In case of positive blood test, a intestinal biopsy can be done for further confirmation.
Do you have any associated symptoms like joint pain or migraine or depression or skin rashes?
As your mother is 60 years old i strongly suspect it to be gluten sensitivity and not celiac. If she is continuously getting diarrhea, the body can't absorb vital nutrients and she may get Vitamin deficiencies. Vitamin B12 deficiency with neurological symptoms like weakness tingling and anemia is commonly seen in such cases.
If you remove the gluten containing foods like whole wheat and bread from her diet she will get better. You can substitute rice and Buckwheat which are gluten free. You should also give vitamin supplements if she is having diarrhea for long time.

If tingling weakness and anemia is present she is most likely having b12 deficiency anemia. You can get over the counter vitamin supplements without sugar. You can give that.You can ask your treating doctor for vitamin b12 supplements and iron prescription. In case anemia and symptoms are worse she will be needing B12 injections.
You should strictly avoid gluten containing food for her.You should also give her fluids according to the loss.over the counter ORS can be given but shouldn't go excess as she is diabetic and hypertensive.You can give her rice porridge and curd. If diarrhea is not stopping even after changing gluten containing food and exceeding more than 4 to 5 times per day then better hospitalize for intravenous fluid administration.

If she was my patient I advice cyanocobalamin tablets along with the iron tablets.
For diarrhea if it is not stopping after stopping wheat and wheat containing products I advise a stool routine examination for any sign of infection. If any sign of infection is there then I recommend antibiotics like fluroquinolone plus tinidazole.
I also advise a probiotic like bifidobacter. Rice and curd is also good. With this therapy along with giving fluids and electrolyte according to loss by diarrhea she will be fine. But in case her diarrhea and dehydration is more then I advise hospitalization for intravenous fluid administration. You can give warm water bags to apply on abdomen after the episode of diarrhea also. Hope this may help you. Let me know if you have any further queries.

You should approach your treating doctor or nearest doctor for Prescription of drugs and dosage.If there is sign of infection from stool routine examination I advise Fluroquinolones like Ofloxacin, and Tinidazole, and bifidobacter probiotics.Usually for my patients I give them for 5 days.The dosage and duration of that should be adjusted by your nearest doctor. Cyanocobalamin I give for 2 month to 6 months depending on the severity of symptoms.
