Question: I have recently developed a situation where I get uncontrollable diarrhea a day or two after eating Mexican food with chile peppers.

Diarrhea can occur as a result of infection of the bowel with a virus or bacteria or it may be due to intolerance to a specific foods or drink, inflammatory bowel disease or irritable bowel syndrome.

Since the diarrhea occurs after using the food with chile peppers then it implies that it is likely due to intolerance to an ingredient.
In some persons, intolerance can develop over time so that , a food that may have been previously well tolerated may become problematic.

The use of probiotics (on their own or in some yogurts) may help to reduce the response but in general , if a particular food is causing problems it would need to be eliminated from the diet.

Diarrhea itself is treated with the use of fluids to prevent dehydration. Fluids that give both electrolytes and fluid replacement are important eg gatorade or oral rehydration solutions

There are medications that can reduce diarrhea such as peptobismol or lomotil
