Yes, indeed, it sounds like you have a healthy balanced diet with the exception of calcium and possibly vitamin D, both of which may help you with weight loss. I must ask if you have had your thyoid evaluated?
The next issue is your calorie level and your metabolism. You are indeed short thus putting you at need for fewer calories than most to lose weight. Just to maintain your current weight of 175, your are probably consuming about 2200 calories approximately. It takes a deficit of 1000 calories a day to lost up to 2 lbs per week. I still see women with your stature losing weight on 1200 calories. I suggest that you look into following a meal plan with approximately 1200 calories, continue exercising 30 minutes at a time for 5 days per week minimum. You need to clear all changes in diet and activity with your doctor.
Were you ever instructed on a transplant diet? Essentially it is instruction on how to eat as cleanly as possible so as not to put any additional burden on the transplant success. I see you are on transplant medication. Are you familiar with your medications? If not, I always advise my clients to thoroughly discuss medications, how to take them properly, side-effects and if there is a diet they should follow along with their medications.
