Brief Answer:
Chronic fatigue syndrome.
Detailed Answer:
Hello,
As you described being in movement for 4 months can cause abnormality of your daily regime that is manifested with chronic fatigue and headache.
Regarding to the thirsty and polidipsia you should see an endocrinologist to differentiate between a psychological polidipsia or a problem of HAD secretion, as Diabetes is ruled out.
If you are aware that you drink water to avoid problems of the climate changes than there is no need to do further tests.
Please do not hesitate to ask if you have still queries.
Best wishes,

I figured out the typo...ADH, not HAD. I would lean more toward general polydipsia over physchogenic. Your reply makes sense to me and I feel slightly validated and less worried.
Just reading up in it explains the odd taste in mouth and probably the antibiotic smell of urine as well. I just hope my regular Dr. Can help me as we only "land" in Bend, where I am insured, for a short time before taking off again.
Thank you, Patti
