I read your question carefully and I understand your concern.

It seems by your query that you have had only one isolated seizure, which didn't repeat. In that case to be honest I am not sure I agree with starting treatment. Usually a diagnosis of epilepsy is made when there have happened at least two seizures. There are cases of epileptic seizures which do not repeat and don't need treatment.
Had there been issues noted on MRI or EEG might have been another discussion, but for only one seizure with normal MRI and EEG the recommendation is to wait and see instead of starting a treatment which is taken for a long time with possible unnecessary side effects.

So I think you should discuss with your doctor the possibility of abstaining from treatment for the moment. Perhaps the EEG could be repeated. It is true what the doctor said that half the cases with epilepsy can have a normal EEG outside the seizure, but on repeat EEGs the chances of detecting an abnormality increase (from a study if EEG repeated up to 4 times chances of detecting abnormalities go to 90%).

I hope to have been of help.
