I am happy that you obtained your kidney! Regarding your question, to do you justice I recommend that you see a qualified Dietitian as several alteration to your diet need to be made to assure you maintain healthy sugars and a healthy
metabolism.
The Dietitian will have to coordinate your caloric intake, timing of day all with regards to the type of
insulin you are on and the dosage schedule to keep blood sugars stable.
Your medication, such as
Prednisone, also require some dietary considerations such as low sodium, possibly calcium/vitamin D, potassium, phosphorous, vitamins A and C. Also, the way you ate prior to the
kidney transplant will be different now post transplant.
Since you need an individualized meal plan with multiple considerations, I highly recommend that you find a Qualified Dietitian, hopefully a Certified Diabetic Educator (CDE, RD) to work with you in setting up your meal plan.
