You have not mentioned if you are a diabetic (as is suggested by the fact that you take low-carb diet to control your blood sugar). Or, did you mean that you take low-carb diet to control LOW blood sugar?
In either case, your symptoms are suggestive of low blood sugar levels after meals (called post-prandial hypoglycemia). All diabetics, particularly those on oral anti-diabetic drugs, are required to have adequate carbs to provide adequate energy for routine activities. A low-carb diet tends to cause
reactive hypoglycemia, which manifests as palpitations.
On the other hand, if your blood sugar tends to remain low, a low-carb diet is unable to meet the caloric requirements. It therefore lowers blood sugar levels.
You need to undergo blood sugar estimation after a meal to rule out/detect low blood sugar level.
